Shannon's journey into the performing arts began with a dare during her pre-med studies. When challenged by a classmate to audition for a role in a college theater production directed by a respected director, she accepted and was cast as Sonja in Chekhov's UNCLE VANYA. This experience led her to pursue dual majors in pre-med and theatre arts. Ultimately, a faculty adviser encouraged her to choose acting, noting that the performing arts would allow her to explore a variety of interests, unlike the singular focus required by medicine.
Her extensive repertory work—embodying characters created by Shakespeare, Ibsen, Shaw, Oscar Wilde, Tennessee Williams, and others—has shaped her remarkable ability to transform into diverse roles. These include the refined and aloof Amanda Cathcart in NBC's Margaret Mitchell: A Burning Passion; the comically repressed moral crusader Helen Hunter in ABC Family's comedy Pop Rocks; and the sorrowful Ann Alden Forbes on ABC's daytime serial Loving, for which the New York Times praised her as "the cream of the crop... Eubanks is smashing as Roger's betrayed and bitter wife Ann." Fans of supernatural drama may recognize her as the haunting, smoky-voiced witch Bastianna Natale on the CW's The Originals.
