The father worked for the Nestlé Group for many years, while his wife managed the household and family. Gubser completed his high school education and then trained as an actor at the prestigious Max Reinhardt Seminar in Vienna from 1978 to 1981. Following his training, he performed on stage at venues including Vienna's Burgtheater. From 1983, he was a permanent member of the Bavarian State Theater ensemble in Munich for three years, followed by an engagement at the Wiesbaden State Theater. In 1986, the State of Berlin recognized him for his stage accomplishments. By the late 1980s, he shifted to filmmaking and gained popularity with audiences through crime series. Between 1989 and 1992, he portrayed a Swiss commissioner investigating cases in the European series "Eurocops."
In the 1997 romantic drama "Confessional of Desire," directed by Peter Lehner, he played a young priest. The trained actor also appeared in a recurring role as Erik Hilgers in the 2002 early evening series "Star Catcher." He received the Swiss television award TV Star in the "Film" category in 2005, followed by the audience award at the "Festival of German Film" and the Interfilm Prize for "Hellogoodbye" at the Max Ophüls Festival in 2008. In 2006, he produced his first feature film, "Before I Live," directed by Stefan Jäger, fulfilling his personal ambition to work behind the camera. The following year, he co-wrote and produced the drama "Hello Goodbye," also starring as the terminally ill father Michael, a performance praised by critics for its authenticity.
To support his film projects, he co-founded the production company "tellfilm" with director Stefan Jäger. That same year, he returned to the stage in the midlife comedy "Alte Freunde," portraying one of four former college friends. He also produced the play through his second production company, Gubser&Bloch, established in 2006. In the stage comedy "Rockerbuebe," produced by Gubser&Bloch, he showcased his comedic talents repeatedly. Over his more than 30-year career, Stefan Gubser has collaborated with renowned filmmakers such as Markus Fischer and Markus Imboden and performed alongside notable actors including Ben Gazzara, Dana Vavrowa, Matthias Habich, David Carradine, and Claudia Cardinale.
In 2010, Gubser and his company "tellfilm" produced Lucerne's first "Tatort," marking Swiss television's return to this international crime series after a decade-long absence. Simultaneously, he began portraying Inspector Reto Flückinger, a consistent member of the Swiss "Tatort" team since 2011. The debut episode, "Wishful Thinking," faced challenges; Swiss television postponed its broadcast from spring 2011 to August for post-production, amid criticism that his co-star Sofia Milos, playing Abby Lanning, was miscast.
In 2017, together with his daughter Stefanie, he published the fairy tale book "Di gschtifleti Gans - Grimm-Märli und Schlafliedli zum Läse und Loose," illustrated by Frank Baumann. In 2019, he appeared in his 15th "Tatort" episode, titled "Auszahlen.
